Ingredients:
- 2 Flounder fillets (no bones or skin) - 4 oz each.
- 1 tsp. ground cumin
- 1/4 tsp. pepper
- 4 Small Mission Carb Balance Wheat Tortillas
- Toppers: Avocado, tomato, fat free sour cream sour cream, salsa, onion, cheese, black beans, fat free refried beans- you name it.
Directions:
- Line a cookie sheet with foil. Place the flounder fillets on the pan and rub the cumin and pepper onto the fish. Bake the fish however you prefer until it flakes when it is done.
- Cut each fillet in half. Cut each half into smaller pieces.
- Warm the tortillas in the microwave for about 20 seconds.
- Place 1/2 a fillet onto each tortilla shell and add the toppings and enjoy!
This makes 4 fish tacos. I make each taco with 1 oz. avocado, tomato, 1 Tbs. fat free sour cream, and salsa. One taco is about 4 Points Plus. Always remember to calculate your own Points Plus based on the ingredients that you are using. As you can see in the photo above, I like to eat mine along with a side of fat free refried beans.
Mmmmm... fish tacos sound yummy. I don't really cook with fish that often, but I might have to try these tacos :)

I sure wish I could eat fish because this looks like a great recipe. Something about fish and seafood breaks me out in hives. Strange, huh? LOL
